For ten days this May, the vibrant city of Casablanca is offering its residents and visitors a rare chance to experience the rich flavors and traditions of Vietnam. From May 19 to 29, the Hyatt Regency is hosting a special culinary showcase at its signature restaurant, Café M, in collaboration with the Vietnamese Embassy and diplomat Le Kim Quy.

At the heart of the event are two guest chefs flown in from the Hyatt Regency in Da Nang, who have taken over the kitchen with a clear mission: to transport diners from the heart of Casablanca’s medina straight to the shores of central Vietnam. The menu they’ve crafted is a temporary one, designed not just to highlight Vietnamese cuisine but to build a cultural bridge, blending Southeast Asian recipes with touches of French elegance and Moroccan warmth.

Café M, already considered one of Casablanca’s most refined dining venues, is the perfect setting for this cross-cultural experience. Known for its ability to fuse global influences in both atmosphere and cuisine, the restaurant is now hosting an event that once again showcases its flair for blending tradition with modern sophistication. The “Flavors of Vietnam” celebration is just the latest example of its commitment to culinary diversity.

The official opening night on May 19 drew an eclectic crowd, including diplomats, cultural figures, journalists, and devoted food lovers. A highlight of the evening was a performance by Minh-Trang Nguyen, a celebrated multi-instrumentalist whose mastery of traditional Vietnamese instruments like the đàn tranh brought a deeply emotional and contemporary dimension to the event.

Through this initiative, the Hyatt Regency Casablanca reaffirms its dedication to creating memorable, immersive experiences that engage both the senses and the mind.
