
People in Rabat now have a new place to try Moroccan food after the Rabat Marriott Hotel officially opened Sanuj, a restaurant that gives traditional dishes a modern touch. The restaurant was developed by MADAËF Brand Factory and is aimed at both local and international guests. Its name comes from sanouj, the black nigella seed that has been used in Moroccan cooking for generations.
The menu, created by Chef Baya, is split into two main sections.
One offers Moroccan tapas, with small dishes designed for sharing, casual meals and afterwork gatherings. The other, called “Dishes of Memory”, focuses on traditional Moroccan meals made with slow-cooked meats, rich sauces and the sweet and savoury flavours often found in local cuisine.
The dishes use traditional cooking methods and spices from different parts of Morocco, including the Souss region.
Guests can also choose from a drinks menu featuring Moroccan products as well as international options.
The restaurant’s design combines traditional Moroccan features with a more modern look. It includes zellige tilework, carved wooden details, brass lanterns, wooden screens and green decorative ceilings.
Sanuj also offers live entertainment during dining service. The programme, managed by Saloua Regragui, includes oud musicians, singers and short theatrical performances instead of relying only on background music.
