Pachamama has opened at the Rabat Marriott Hotel, bringing a Spanish-style restaurant and lounge to the capital. It is the brand’s fifth location in Morocco after El Jadida, Nador, Tamuda Bay and Fes.
The place is meant to feel like a social hangout rather than a classic restaurant. It is inspired by coastal Andalusia and features a large 12-metre bar, handmade ceramics and embroidered table linens.

The kitchen is run by Chef Amine Amzani. The menu is built around sharing plates and daily specials using seasonal ingredients and fresh fish. The chefs cook much of the food over charcoal using the Robata grilling method to bring out natural flavours.
The venue also hosts flamenco nights with live guitar and dance, long weekend brunch sessions and cooking workshops where guests can learn dishes such as paella.

The Andalusian theme links to the long history between Morocco and southern Spain. Many Andalusians settled in Rabat and nearby Salé centuries ago and influenced local culture, music and architecture.
The opening also reflects a wider change in Rabat. The city is becoming more of a cultural and nightlife destination, with new high-end venues that mix dining and entertainment.

The Rabat Marriott Hotel has been building a strong food offering. It already has Le Grill Robuchon and Le Café Robuchon, linked to the late chef Joël Robuchon. Pachamama adds a more lively option to the hotel’s restaurants.
